Lactose is a disaccharide sugar composed of galactose and glucose that is found in milk. Hydrolysed to glucose and galactose, isomerized in alkaline solution to lactulose, and catalytically hydrogenated to the corresponding polyhydric alcohol, lactitol. Used for the culture of lactic acid metabolizing bacteria. Used to identify and characterized galectins. Used in food industry and pharmaceutical applications. Based on its bland flavor it is used as a carrier and stabilizer of aromas and carrier in inhalable formulations in pharmaceutical products.
