Lycopene is a red-colored carotenoid found in tomatoes and other red fruits and vegetables. Lycopene shows strong antioxidant activity and efficiently quench singlet oxygen. The ability to neutralize free radicals via lycopene is one of the foundations of its pro-health effect. The pharmacological activity of Lycopene includes antioxidant, antibacterial, hypolipidemic, anticancer, immunity-enhancing, hepatoprotective, hypoglycemic, cardiovascular-protective, anti-inflammatory, neuroprotective, and osteoporosis-inhibiting effects. Lycopene demonstrated to be a potential alternative to traditional artificial antioxidants, with significant health benefits when applied to food preservation.
