Chlorogenic acid is a phenolic natural product isolated from the leaves and fruits of dicotyledonous plants, including the coffee bean. Structurally, it is the ester of caffeic acid with the 3-hydroxyl group of quinic acid. Chlorogenic acid is an intermediate in lignin biosynthesisis an therefore an important factor in plant metabolism. This compound has been shown to have a broad range of biological properties, including hepatoprotective, antioxidant, neuroprotective, anti-diabetic, antimicrobial, anticarcinogenic, anti-inflammatory and anti-obesity activities. Recent studies showed the involvement in regulating glucose and lipid metabolism, improving insulin sensitivity and promotion of weight loss. In addition it has to have modulatory activities on the microbiota.
